Despite having thought of this gift last summer, a week before the holiday I had no hotels booked and I needed 3! My mum, doing her job, helped me. She suggested using a website called Late Rooms. Basically, it’s the best thing on the internet, a deserves to out-traffic Facebook. I’m not sure if it’s just for last minute bookings like the name suggests, but every hotel I booked was massively reduced. God I feel like a cheap old woman (no offence to cheap old women).

This is a real good recipe to know. I hate throwing away food, and it only takes about 10 minutes to prepare, then you just have to wait an hour until it’s baked. I’d advise to eat this when it’s still warm. It’s good cold, but you can’t beat that oven freshness.

75g margarine

1 large egg, beaten

225g plain flour

2 level teaspoons baking powder

4 medium bananas, pealed

• Pre-heat the oven to gas mark 4.
• A loaf tin, greased.
• Place the margarine, sugar and the beaten egg in a large mixing bowl, then shift the flour and baking powder. In another bowl slice the bananas and mash them to a pulp with a fork.
• Now, use an electric mixer to whisk the sugar, egg and flour together until they are thoroughly combined.
• Then add the bananas to the bowl and whisk again thoroughly. Then transfer the mixture to the prepared tin and level the top off.
• Bake on the center shelf of the oven for 50-55 minutes, until golden, well risen and springs back when pressed with a finger.
• Leave for 10 minutes to cool. Then Enjoy!

Pity I don’t have a recipe for all those tangerines!
